The OH!mypiquenique and OH!myapéritif baskets are ready to head out with you into the sunshine, onto the lawn. Because improvising is already part of the fun. The ever-popular barbecue will share its tales of sizzling coals, with a touch of American flair. Back home, wine, beer, and soft drinks will help you recharge. A cocktail recipe book will be available for the most enthusiastic among you.

And, the icing on the cake, a well-stocked grocery shop open to everyone, where you can indulge in delicious finds with the expert advice of the grocer (grocery delivery can be scheduled). Nothing is too much trouble for you!

Chloé Charles' career path is at the crossroads of a demanding classical training and a passion for "eating well" that stops at nothing. Through her experiences and encounters, she identifies what she likes: at the center, the product. In contact with François Pasteau at l'Épi Dupin, she learns to be inventive on a daily basis, so that each product is used to its full potential. Chloé would later put this creativity to work at Lasserre, then at l'Astrance, l'Agapé, l'Agapé Subtance, and on to Septime, where she assisted chef Bertrand Grébaut for 2 years. When the opportunity arose to become the first resident chef at Fulgurances, L'Adresse, Chloé decided to showcase her love of well-treated produce by offering her customers zero-waste bites every week. Now a multi-hatted entrepreneur, she gives free rein to her demanding, generous and colorful cuisine at private dinners and receptions for individuals and major brands. She regularly offers her services to restaurateurs, local authorities and company restaurants, where the economy of the product and the reduction of food waste take on their full meaning.

Tian of vegetables

- Vegetable tian

Preparation time: 20 min
Cooking time: 30 min then 50 min

Difficulty: a child couldn't do it but you should be able to

Equipment: large saucepan or casserole / mandolin (optional) / gratin dish / aluminium

Ingredients:

- The tian
- 2 green zucchini
- 2 yellow zucchini
- 5 round tomatoes or 3 multicolored heirloom tomatoes
- 2 purple eggplants or 3 small graffiti eggplants
- 1 red onion
- 1 bunch basil
- 1 bag grated Parmesan (100g)
- Olive oil
- Flower of salt and freshly ground pepper

The tomato sauce :
- 500ml organic crushed tomatoes
- 4 garlic cloves
- 1 shallot
- 1 teaspoon smoked paprika
- 1 sprig thyme
- A few basil leaves
- Salt and freshly ground pepper

Preparation:

The tomato sauce
- In a casserole or large saucepan, sauté the shallot and minced garlic in a base of olive oil over medium heat for a few minutes.
- When the shallot is translucent, add the crushed tomatoes.
- Add a small amount of water, the sprig of thyme, the smoked paprika, salt and pepper.
- Cover and cook for 30 minutes. Add a little water from time to time if necessary.

The vegetables
- Using a mandolin or a sharp knife, slice all the vegetables into 1.5 or 2mm-thick slices. Set aside.
- Remove the leaves from the bunch of basil.



Assembly:
- Line a gratin dish with a layer of tomato sauce. Cover with basil leaves.
- Assemble the tian, alternating slices of the different vegetables until all the slices are used up.
- Sprinkle with grated Parmesan and drizzle with olive oil. Season with salt and pepper.
- Cover the dish with aluminum foil and place in the oven for at least 30 minutes. (The aluminum foil will allow the vegetables to release their water and not dry out). After the half-hour cooking time, remove the foil and continue cooking for a further 20 minutes. If the vegetables don't melt, continue cooking for a further ten minutes.
- Once out of the oven, decorate with the remaining basil leaves and enjoy!

Tips: replace the smoked paprika with curry powder and your dish will take on a whole new dimension! If you add mozzarella on top of the vegetables, you'll get a dish that comes very close to parmigiana, and we love it!
